Quesadilla


Red and green peppers diced
Red onion diced
Canned Corn
Black Beans
Chicken or Shrimp (if you like can make vegetarian too)
Tortillas (I use La Tortilla Factory Whole Wheat)
2 tbsps Sour Cream (I use light or fat free)
1-2 tbsp Taco Sauce or Salsa
1/3 - 1/2 cup Shredded Cheese (I use 2% sharp cheddar)

In a warm pan place tortilla add shredded cheese, peppers, onions, corn, bean, chicken or shrimp (or both). Either fold in half or top with second tortilla depending on how much you want.

Once cheese begins to melt flip in pan. Once cheese is totally melted remove from pan. Slice with pizza cutter. Use sour cream and salsa for garnish. Guacomole is always good too.
