Rhubarb Cake


This recipe is from my grandma.

1 1/2 cups brown sugar (I use half splenda and half brown sugar)
1/2 cup shortening (I use applesauce)
1 egg (I use egg beaters)

Mix first 3 ingredients well.

1 tsp soda
1 cup buttermilk
2 cups flour (I use half wheat flour)

Mix in buttermilk, and flour alternately; mixing after each addition.

2 cups rhubarb diced
1 tsp vanilla

(when using frozen rhubarb thaw and drain before mixing into batter).

put in greased 9 x 13 pan.

1/4 cup sugar and 1/2 tsp cinnamon

Bake at 350 for 30 minutes.

Goes really good with ice cream or whipped cream topping.
